Quick Steamed Sponge Pudding recipe below ↓

Serves 4 and takes about 30 minutes.

Ingredients -
Butter for greasing,
175g sifted plain flour,
50g soft dark brown sugar,
75g vegetable suet,
1 teaspoon of bicarbonate of soda,
2 teaspoons of ground ginger,
1 large organic or free range egg,
1 tablespoon of golden syrup,
Juice & finely grated zest of an orange,
4 tablespoons of your favourite jam,
150ml milk.

To serve - custard or cream.

Method
1) Grease well the inside of four wide, microwavable mugs. Tip all the ingredients, bar the jam into a bowl and mix with a wooden spoon until thick and soft.

2) Spoon a dollop of the jam into the bottom of each mug.

3) Cut out four circles of greaseproof paper, making sure they're larger than the diameter of the mugs. Cover the mugs with these and fix tightly in place with elastic bands.

4) Place the mugs in the microwave and cook for five minutes on the medium setting. Allow to stand in the oven for 5 more minutes before removing paper.

5) Tip out mugs into individual bowls and eat immediately with desired topping.
